1. Sugar Alcohols (Maltitol, Sorbitol, Xylitol)
Many "low sugar" protein bars substitute regular sugar with sugar alcohols. Manufacturers market these as diabetic-friendly or keto-friendly. The truth is more complicated:
Maltitol has a glycaemic index of 52 — nearly as high as table sugar (GI 65). It WILL spike blood sugar in diabetics.
