India has a food adulteration crisis hiding in plain sight. Government audits consistently show that more than 27.5% of tested food samples fail safety or quality standards — meaning more than one in four items you buy from a local market may be adulterated.

The Scale of India's Food Adulteration Problem
Between 2022 and 2025, FSSAI analysed over 5.18 lakh food samples across India. The results led to 88,192 penalties, 3,614 convictions, and 1,161 licence cancellations. Yet enforcement alone cannot fix the problem — the economic incentive to adulterate is too high and the monitoring too thin.
Most adulterated foods in India:
Milk — water, urea, detergent, caustic soda, synthetic milk compounds
Ghee — vanaspati, vegetable oils, animal fat, starch
Honey — sugar syrup, corn syrup, jaggery water, artificial sweeteners
Turmeric powder — metanil yellow dye, lead chromate, brick powder
Chilli powder — brick powder, red oxide, artificial colours, sand
Mustard oil — argemone oil (causes epidemic dropsy), mineral oil
Paneer — palmolein oil, starch, detergent (March 2026: 1,400 kg seized in Surat)
Black pepper — dried papaya seeds, light berries
Tea leaves — used leaves, artificial colouring, iron filings
Pulses and grains — stones, sand, marble chips, coloured seeds
FSSAI-Approved Home Tests: Detect Adulteration Yourself
Test 1: Milk Adulteration
Test for water: Pour a drop of milk on a polished/slanted surface. Pure milk flows slowly leaving a white trail. Watered milk flows quickly with no trail.
Test for detergent: Shake milk vigorously in a bottle. Pure milk forms very little lather. Detergent-adulterated milk forms a dense, persistent foam.
Test for urea: Mix half teaspoon of soybean or arhar dal powder with half teaspoon milk, shake well, and after 5 minutes dip a red litmus paper. If it turns blue, urea is present.
Test for synthetic milk: Synthetic milk (made from urea, detergent, oil, and water) tastes bitter and feels soapy when rubbed between fingers. Natural milk does not.
Test 2: Ghee Adulteration
Test for vanaspati/vegetable oil: Melt one teaspoon of ghee in a test tube. Add sugar and concentrated hydrochloric acid. Shake. Red/crimson colour at bottom indicates vanaspati (contains sesame oil marker dye).
Test for starch: Melt ghee and add 2–3 drops of iodine. Blue/purple colour indicates starch (potato, sweet potato) mixed in.
Test for coal tar dye: Melt ghee and add hydrochloric acid. Pink/red colour indicates artificial colour.
Test 3: Honey Adulteration
Water test: Add a spoon of honey to a glass of water. Pure honey settles at the bottom without dissolving immediately. Adulterated honey (with sugar syrup) dissolves and clouds the water.
Flame test: Dip a cotton wick in honey and light it. Pure honey burns. Adulterated honey (with water) will crackle or not burn due to moisture.
Paper test: Put a drop of honey on blotting paper. Pure honey does not get absorbed. Adulterated honey (with water) gets absorbed quickly.
Test 4: Turmeric Adulteration
Water test: Add one teaspoon of turmeric to a glass of warm water and stir. Pure turmeric settles at the bottom and leaves slightly yellow but clear water. Adulterated turmeric clouds the water with intense yellow/orange streaks — indicating artificial dye or brick powder.
Hydrochloric acid test: Add a few drops of concentrated HCl to turmeric solution. Pure turmeric turns magenta/pink then fades. If the colour persists or intensifies, metanil yellow dye is present — a proven carcinogen banned by FSSAI.
Test 5: Chilli Powder Adulteration
Water float test: Sprinkle chilli powder on water. Pure chilli powder settles without streaking. Artificial dyes leave an immediate red streak on the water surface.
Soap solution test: Mix chilli powder with soap solution. Brick powder settles at the bottom as gritty residue.
Test 6: Mustard Oil Adulteration
Argemone oil test (critical — causes epidemic dropsy): Add a few drops of concentrated nitric acid to mustard oil in a test tube. Shake and observe. Orange/red colour in the acid layer indicates argemone oil — a dangerous adulterant that has caused mass poisoning in India.
